Tuna Sandwich with Apple


The best homemade canned tuna from one of my besties is something money cannot buy.
 Apple adds the crunch and flavor but you can use celery, sweet relish, or chopped canned olives.

Make two  sandwiches

6 oz canned tuna
1/2 apple, peeled or not, coarsely chopped
1 teaspoon lime or lemon juice
4 Tablespoon mayonnaise
1 teaspoon garlic powder
1/8 teaspoon ground black pepper
1 Tablespoon freshly chopped basil or 1 teaspoon dried basil
4 slices of bread of your choice
Few lettuce leaves, tomato, avocado (optional)
  1. In a medium bowl, toss apple with lemon juice first.  Then add all ingredients except bread.  Mix well, cover and chill in the fridge for two hours, allowing flavors to meld.
  2. Toad bread until golden brown along edges. Top one slice with lettuce, tomato, avocado slices  if use and 1/2 tuna mixture, top with the other slice and cut sandwich in half.  Serve immediately.
