Amber cup


Too many kinds of Fall squash/pumpkin at the store.  I bought an Amber cup due to a brief description on the label-Very sweet with golden orange meat; fine grain; good for stuffing or baking.

This is a big one, I am going to make a couple dishes out of it.  First course today, Pumpkin Risotto. Well, it was called Amber cup not pumpkin but it is sweet and beautiful orange meat.  I think it will be good.

A cleaver will help to chop up a large tough squash easy.  Do not chop squash on the pricy counter.  Vietnamese way, put the squash on a cutting board on the floor. Chop it into half. Scoop the seeds out with a spoon.  Then chop the halves into small pieces.  Hold one piece on the cutting board. Remove the skin with a sharp chef knife.
