Sinh Tố Bơ- Vietnamese Avocado Smoothie

Believe it or not ? This is the only way I had eaten avocado before arriving to America.
"Sinh Tố"- a creamy, sweet drink  from  pureed fresh fruit with condensed milk, milk, sugar and ice.  It is named after the fruit/s as sinh tố Bơ is make with avocado, sinh tố dâu is made with strawberries.   It can be use as a midday snack or dessert.
My daughter hardly eats breakfast before work so sometimes I add a soft boiled egg and blend them until real smooth instead of using protein powder .  I used to make sinh tố as a snack for my kids after school specially the boys.  It is my trick to get the boys "eating" more fruit.
Condensed milk is more expensive than sugar so vendors will replace some condensed milk  with sugar. Cover tightly with a plastic wrap or put opened can in an airtight container.  Vietnamese do not transfer leftover condensed milk into another glass or plastic container. It is good up to 3 weeks.

Make 16 oz ( 1 cup) servings
1 small ripe avocado
3 Tbs condensed milk
1 cup ice cubes
2 Tbs  whole milk plus extra ( up to 1/4 cup)  if needed for desired consistency

Cut the avocado in half, remove the seed, scoop the flesh into the blender.  Add all other ingredients and process until smooth.  Check and add more milk if you like a thinner consistency or condense milk for sweeter taste.  It should remain creamy and thick but we are able to drink it with a straw easily.

Serve in a tall glass with a straw.
