Chocolate Orange Peel Candied-Mut Vo Cam Nhung So Co La

4 Navel oranges preferred organic for pesticides safety
1 1/2 cup sugar
3/4 cup water
1 cup mild or semi-sweet chocolate chips

1.  Use a knife to cut the tops orange off and score the peel of orange into quarters.  Peel the oranges carefully, try to keep the peel with the white pitch intact .  Cut the peels lengthwise into 1/4 inch wide  strips.  Save orange for other use.
2.  Put the peels in a medium pot, cover with water and bring the mixture to a boil over for 1 minutes over medium heat (some stated 5 minutes three times will remove all the bitterness).  Drain and repeat 2 more times to help get rid of the bitterness of the pith.  Drain well.  You may want to trim the white pith now if they are too thick or have a rough surface but do not trim it too thin.  Trimming help to make the candied peels straight too.
3.  In a large saute pan, combine sugar and water over medium heat.  Stir until the sugar dissolve,  add orange strips.  Turn the heat down to medium low, simmer, uncover and stir frequently until the white pith becomes translucent and most of the syrup is absorbed about 1 hours.  Turn the heat down to low, and stir about 15-20 minutes more.  The sugar crystal is forming like the peels was dipping into the granulated sugar.  Remove from heat.
4.  Put a wire cooling rack over a wax/parchment paper or a baking sheet.  Transfer and separate orange peels to the rack.  Uncover, let it dry over night
5.  Melt 2/3 cup chocolate in a heatproof bowl over gently simmer water (do not let water boil, it will overheat chocolate and you have to restart again-Hmm you could guess what did I do).  Do not let water touch the bowl or get into the chocolate.  Stir frequently, when chocolate melt, remove from heat. The instant thermometer should read 110 oF. Add the remaining chocolate chip in and stir until all melted.  Dip candied orange peels in melted chocolate and put it back to the cooling rack again.  If the chocolate gets cool and thicken, it can be warmed up gently over simmering water again .  When the chocolate sets, store the chocolate orange candies in an air tight container at room temperature.  They can be keeps for few weeks.
