Red Cabbage and Carot Salad-Goi Bap Cai Do voi Ca Rot

Make 4 servings as a side dish
   1/2 lb red cabbage
   1 medium carrot
   A handful mixed herbs of your choice:  flat leave parley, mint, chive, dill, ...
   1 Tbs lemon or lime juice
   1 Tbs vinegar of your choice: rice vinegar, red wine vinegar, apple cider vinegar, white distill vinegar,...
   1-2 tsp granulated sugar
   1/4 tsp salt
   1-2 Tbs olive oil or any oil of your choice:  sesame oil, canola oil,...
   1 tsp dijon mustard (optional) 
   1 garlic clove, crushed or finely chopped  

  1. Shred cabbage thinly and soak in cool water for 15 minutes then drain.
  2. Julienne carot,
  3. Thinly slice the herbs
  4. Mix lemond juice, vinegar, salt, oil, dijon mustard, salt and sugar together in a mixing bowl.  Add cabbage, carrot, garlic, and herb.  Toss well, taste and adjust seasoning if needed. It can be served right away or made in advance and store in the fridge.  It is still good for a few days in the fridge.
