Okonomiyaki Hiroshima-style -Japanese Pancake with Yakisoba Noodles-Banh Bot Chien voi Mi kieu Nhat

Serves 4
   4 Tbs vegetable oil and extra 1 tsp oil for cooking pork
   1 cup thinly sliced pork
   4 eggs
   2/3 lb presteamed yakisoba noodles
   2 cups thinly shredded cabbage
   2 cups beansprout
   1 cup bonita flakes (about a handful)
  4 green onion, thinly sliced
   Aonori (dried green seaweed flakes)
   Okonomiyaki sauce (available from Asian stores)
   Yakisoba sauce   
   Salt and ground black pepper to taste
   
Okonomiyaki Pancake Batter
   1 1/2 cups all purposed flour
   1 1/2 cups water 
   1/2 tsp garlic powder or 1 tsp crushed garlic
   1 tsp soy sauce
   1/8 tsp salt
Combine water, garlic, soy sauce, and salt.  Whisk in flour.  Set aside while prepare other steps.
Make pancakes one by one with large non-stick saute pans.   The following method is for someone can not toss or flip with food in the air like me.

  1. Heat 1 tsp oil in a saute pan over medium high heat.  Stir fry pork and lightly season pork with salt and pepper.  Cook pork until no pink color. Set aside.
  2. Heat 1 tsp oil in a large non-stick pan over medium high heat.  Ladle 1/4 of the batter, make a thin round layer pancake.  When the pancake sets and the bottom is ligh brown, turn it over and cook for 1 minute, slice it to a plate.  Return the pan to medium high heat,heat 1 tsp oil. Add in layers: first 1/2 cup of beansprout, a pinch of bonito, and 1/2 cup of cabbage. Then put the pancake over the cabbage, press down. Turn the heat down to medium.
  3. Meanwhile, preheat 1/4 Yakisoba noodles with 1 tsp Yakisoba sauce in microwave for 30 seconds, stir and taste.  Add more sauce to your liking. And cook for 30 second.
  4. Cover the pan having the pancake with a plate (slightly smaller than the pan, its rim should stay inside the pan's rim).  Turn it up side down so the pancake will sit and contact with the plate and the vegges on the top.  Then slide the pancake back onto the pan. Now the pancake sits on the pan with the veggie up.  Cover the veggie with 1/4 of pork, and arrange noodles into a round layer on the top of pork.
  5. In another large non-stick pan, heat 1 tsp oil over medium. Slightly beat one egg in a small bowl, pour it into the pan, try to make it round. When the egg sets, turn it over (you may slide it to a plate and back to the pan).  When the egg is cooked, transfer it atop the noodles.  Then put a large spatula underneath the pancake and help guiding the pancake to the serving plate.
  6. Sprinkle the pancake with Okonomiyaki sauce, onion, and aonori.  I could not find aonori at store so I just cut a nori sheet into small pieces.  You may keep the pancake warm in preheat oven while making another one.
